Evidencia sobre la capacidad antioxidante del kéfir elaborado con leche de cabra y leche de vaca: una revisión sistemática

Resumen

El Kéfir es una bebida fermentada que contienen múltiples microrganismos. Ha sido recomendada por su potencial antioxidante y antimicromiano. Se consultaron bases de datos PubMed, Web of Science, ScienceDirect y Taylor & Francis Online, sin restricción temporal de publicación. Los resultados mostraron una tendencia hacia una mayor actividad antioxidante en el kéfir elaborado con leche de cabra. En el ensayo ABTS, favoreció al kéfir caprino, aunque no de manera unánime. La evidencia para los ensayos FRAP y CFT fue más limitada y heterogénea. Las diferencias observadas pueden estar relacionadas con las características proteicas y lipídicas de la leche de cabra, así como con la generación de compuestos bioactivos durante la fermentación; sin embargo, la evidencia disponible no permite identificar con certeza los mecanismos responsables. La heterogeneidad metodológica entre los estudios, las diferencias en las unidades de reporte y la escasez de datos comparativos particularmente para CTF limitan la solidez de las conclusiones.
